Shiitake mushrooms (scientific name: Lentinula edodes), also known as winter mushrooms, northern mushrooms, fragrant mushrooms, thick mushrooms, thin mushrooms, flower mushrooms, and shiitake mushrooms, belong to the genus Lentinula in the family Microcerataceae, and are all edible mushrooms.

Shiitake mushrooms contain a unique aromatic substance called lentinan, which gives them their distinctive mushroom aroma, hence the name "shiitake mushroom." Every 100 grams of fresh shiitake mushrooms contains 12-14 grams of protein, 59.3 grams of carbohydrates, 124 milligrams of calcium, 415 milligrams of phosphorus, 25.3 milligrams of iron, as well as polysaccharides, vitamin B1, vitamin B2, and vitamin C.
